Ingredients
250g dark chocolate, chopped
1 cup caster sugar
1 cup eggs (about 4 large eggs)
½ cup unsweetened cocoa powder
200ml cream
300g cherries, pitted (fresh or canned)
1 teaspoon vanilla extract
1 pinch of salt
Chocolate shavings for garnish
Icing sugar for dusting

Method
1. Begin by preheating your oven to 180°C (350°F). Grease a round cake pan and line the bottom with baking paper.
2. Melt the dark chocolate in a bowl over simmering water or in the microwave. Stir until smooth, then let it cool slightly.
3. In a separate bowl, whisk together the eggs and sugar until the mixture is pale and thick. Add in the cocoa powder, melted chocolate, vanilla extract, and a pinch of salt. Mix well.
4. Fold in the cherries gently to avoid breaking them. Pour the cake batter into the prepared pan.
5. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely before removing it from the pan. Dust with icing sugar and top with chocolate shavings before serving.
