Ingredients
- 300 ml heavy cream
- 100 ml milk
- 100 g sugar
- 1 tsp vanilla extract
- 4 large egg yolks
- 1/2 tsp sea salt
- 50 g sugar (for caramelizing)
Method
- Preheat the oven to 150°C.
- Combine the heavy cream, milk, sugar, and vanilla extract in a saucepan. Heat it gently until it’s warm but not boiling.
- In a bowl, whisk the egg yolks until they are creamy. Slowly pour the warm cream mixture into the yolks while stirring.
- Pour the mixture into ramekins and place them in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins.
- Bake for about 30-35 minutes until set. After cooling, sprinkle sugar on top and use a kitchen torch to caramelize until golden.
