Ingredients
– 2 cups diced onion

– 2 carrots, diced
– 2 celery stalks, diced

– 1 can (400g) chopped tomatoes
– 4 cups vegetable or chicken broth
– 2 cans (400g each) cannellini beans, drained and rinsed
– 2 cups kale, chopped
– 2 tablespoons olive oil
Method
1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté for about 5 minutes until softened.
2. Stir in the minced garlic and oregano. Cook for another minute, letting the garlic become fragrant.
3. Pour in the chopped tomatoes and broth. Bring the mixture to a gentle boil, then reduce the heat.
4. Add the cannellini beans and kale. Simmer for about 15 minutes, stirring occasionally.
5. Season with salt and pepper to taste before serving warm.
