Ingredients

Method

1. Rinse the quinoa under cold water for about a minute to remove any bitterness.
2. Combine the rinsed quinoa, water, and salt in a pot. Bring this mixture to a boil over medium heat.
3. Once boiling, lower the heat, cover the pot, and let it simmer for 15 minutes.
4. After the time is up, remove the pot from heat and let it sit covered for 5 minutes. Fluff the quinoa with a fork.
5. Heat olive oil in a pan over medium heat. Add garlic and diced vegetables. Sauté until the veggies are tender. Mix in the quinoa, paprika, black pepper, herbs, and lemon juice.
