Ingredients
– 1 kg pork belly
– 1 tablespoon salt
– 1 tablespoon pepper
– 1 tablespoon garlic, minced
– 2 tablespoons vinegar
– 500 ml water
– Cooking oil (for frying)
– 1 cup leeks, chopped (optional)
– 1 cup soy sauce (optional)
– 1 tablespoon calamansi or lemon juice (optional)
Method
1. Cut the pork belly into large chunks.
2. Season the meat with salt, pepper, garlic, and vinegar. Mix well and let it marinate for 30 minutes.
3. Place pork in a pot and pour in water. Bring to a boil, then lower the heat. Simmer for around 1 hour until the meat is tender.
4. Remove pork from the pot and allow it to cool. Pat it dry with paper towels.
5. Heat cooking oil in a deep pan and fry the pork until it is golden brown and crispy. Serve hot with a dipping sauce of soy sauce and calamansi or lemon juice, if desired.
