Ingredients

– 1 can (400 g) black beans, drained and rinsed
– 1 tsp olive oil
– 1 small onion, chopped
– 2 cloves garlic, minced
– 1 tsp ground cumin
– 1 tsp smoked paprika
– 1 cup grated cheese
– 4 large tortillas
– Salt, to taste
– Pepper, to taste

Method

1. Heat the olive oil in a skillet over medium heat.
2. Sauté the chopped onion for about 3-4 minutes until soft.
3. Add minced garlic, cumin, and smoked paprika, stirring for another minute.
4. Mix in the black beans and mash them slightly. Season with salt and pepper.
5. Place some bean mixture and grated cheese on one side of each tortilla. Fold over and cook on both sides until the cheese melts.
