Ingredients
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 2 carrots, diced
– 2 celery stalks, diced
– 450 g cooked ham, diced
– 800 g canned diced tomatoes
– 400 g canned white beans, drained and rinsed
– 1 teaspoon dried thyme
– 750 ml chicken broth
Method
1. Heat olive oil in a large pot over medium heat.
2. Add onion, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.
3. Stir in the ham and cook for another 3 minutes.
4. Pour in diced tomatoes, white beans, thyme, and chicken broth. Mix well and bring to a boil.
5. Reduce heat and simmer for 20 minutes. Serve hot.
