Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 500 g ground turkey
- 1 can (400 g) diced tomatoes
- 1 can (400 g) canned beans, drained and rinsed
- 4 cups vegetable broth
- 2 cups fresh spinach
Method
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; cook until softened.
- Stir in garlic and ground turkey; cook until turkey is browned.
- Mix in diced tomatoes, beans, and vegetable broth; bring to a boil.
- Add spinach, reduce heat, and simmer for 10 minutes.
