Ingredients
– 1 tablespoon oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 carrot, diced
– 1 celery stalk, diced
– 1 can (400g) diced tomatoes
– 1 cup dried lentils
– 1 teaspoon dried thyme
– 750 ml vegetable broth
– 4 cups fresh spinach
Method
1. Heat the oil in a large pot over medium heat.
2. Add the onion, garlic, carrot, and celery. Cook for about 5 minutes until softened.
3. Stir in the diced tomatoes, lentils, thyme, and vegetable broth. Bring to a boil.
4. Reduce the heat and let it simmer for 30 minutes or until lentils are tender.
5. Incorporate the spinach just before serving and stir until wilted.
