Ingredients

Method
1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until soft.
2. Stir in minced garlic and diced chicken, cooking until the chicken is lightly browned.
3. Add mixed vegetables, oregano, and paprika. Cook for about 5 minutes while stirring.
4. Pour in the chicken broth and bring the mixture to a gentle boil. Season with salt and pepper.
5. Reduce heat and simmer for 10 minutes. Serve the chicken and veggies over cooked rice.
