Ingredients
- 1 cup quinoa
- 2 cups water
- 4 cups arugula
- 1 cup cherry tomatoes, halved
- 1 cucumber, chopped
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Method
- Rinse the quinoa under cold water. Combine it with water in a pot. Bring it to a boil over medium heat.
- Cover the pot, reduce heat, and let it simmer for about 15 minutes, or until the water is absorbed. Remove from heat and let it cool.
- In a large bowl, combine arugula, cherry tomatoes, cucumber, red onion, and feta cheese.
- Add the cooled quinoa to the vegetables. Drizzle with olive oil and lemon juice.
- Season with salt and pepper. Toss everything together and serve chilled or at room temperature.
