Healthy Arugula Quinoa Salad Recipe For A Delicious Meal

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 4 cups arugula
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method

  1. Rinse the quinoa under cold water. Combine it with water in a pot. Bring it to a boil over medium heat.
  2. Cover the pot, reduce heat, and let it simmer for about 15 minutes, or until the water is absorbed. Remove from heat and let it cool.
  3. In a large bowl, combine arugula, cherry tomatoes, cucumber, red onion, and feta cheese.
  4. Add the cooled quinoa to the vegetables. Drizzle with olive oil and lemon juice.
  5. Season with salt and pepper. Toss everything together and serve chilled or at room temperature.
