Ingredients
1 cup pumpkin puree
1 cup sugar
1/2 cup vegetable oil
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup cream cheese
Method
1. Preheat your oven to 180°C (350°F) and line baking trays with parchment paper.
2. In a large bowl, mix pumpkin puree, sugar, vegetable oil, and vanilla extract until well combined.
3. Add flour, baking powder, baking soda, salt, and cinnamon to the pumpkin mixture. Stir until everything is mixed together.
4. Drop tablespoons of the batter onto the prepared trays, leaving space between each one. Bake for 15-20 minutes until they are set.
5. Let the whoopie pies cool, then spread cream cheese on the flat side of one pie and place another pie on top.
