Ingredients

– 500 g chicken breast
– 1 cup fresh parsley, chopped
– 1/2 cup olive oil
– 1/4 cup red wine vinegar
– 4 garlic cloves, minced
– 1 teaspoon red pepper flakes
– 1 teaspoon salt
– 1 teaspoon black pepper
– 8 small corn tortillas
– 1 cup diced tomato

Method

1. Start by marinating the chicken. Combine olive oil, red wine vinegar, minced garlic, parsley, red pepper flakes, salt, and black pepper in a bowl.
2. Next, add the chicken breast to the bowl. Make sure the chicken is coated in the marinade. Cover and refrigerate for at least 30 minutes.
3. Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and place it on the grill.
4. Grill the chicken for about 6-7 minutes per side or until fully cooked. Let the chicken rest for a few minutes, then slice it into strips.
5. Warm the corn tortillas on the grill for a minute on each side. Assemble the tacos by adding sliced chicken and diced tomato.
