Ingredients
– 2 large grapefruits
– 2 ripe avocados
– 1 cup feta cheese
– 1/4 cup olive oil
– 2 tablespoons fresh lemon juice
– Salt to taste
– Pepper to taste
– 1/4 cup fresh mint leaves
– 1/4 red onion
Method
1. Cut the grapefruits in half and carefully remove the segments from the membranes.
2. Peel and slice the avocados into bite-sized pieces.
3. Crumble the feta cheese into small pieces and set it aside with the grapefruit and avocado.
4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
5. Combine all ingredients in a large serving bowl and gently mix. Sprinkle mint leaves and chopped red onion on top before serving.
