Ingredients

– 2 cups self-raising flour
– 1 cup brown sugar
– 1 teaspoon ground cinnamon
– ½ teaspoon salt
– ½ cup milk
– ½ cup vegetable oil
– 2 eggs
– 1 cup brown sugar (for filling)
– 3 tablespoons ground cinnamon (for filling)
– 60g butter (melted)

Method

1. Preheat the oven to 180°C. Prepare a muffin tray by greasing it or using paper liners.
2. In a large bowl, mix together the self-raising flour, brown sugar, cinnamon, and salt.
3. Whisk the milk, oil, and eggs in another bowl until combined. Pour this mixture into the dry ingredients and stir until just combined.
4. In a small bowl, combine the extra brown sugar and ground cinnamon for the filling. Prepare the melted butter in another dish.
5. Fill each muffin cup halfway with batter. Add a spoonful of the cinnamon filling, then top with more batter. Drizzle melted butter over each muffin. Bake for 20 to 25 minutes or until they are golden brown.
