Ingredients
– 4 corn tortillas
– 2 cups cooked chicken, shredded

– 1 avocado, sliced

Method
1. Start by heating a skillet over medium heat and adding a little olive oil.
2. In a bowl, mix together the shredded chicken, diced vegetables, cumin, garlic powder, and salt.
3. Place the corn tortillas in the skillet, warming each side for about 30 seconds.
4. Spoon the chicken mixture onto one half of each tortilla, then fold it over like a taco.
5. Cook the taquitos in the skillet for another 2-3 minutes on each side until they are crispy. Serve with salsa, avocado slices, and garnish with cilantro.
