Ingredients
– 1 ½ cups plain flour
– 1 teaspoon baking powder
– 2 teaspoons ground ginger
– 1 teaspoon ground cinnamon
– ½ teaspoon ground nutmeg
– ½ teaspoon salt
– 1 cup brown sugar
– ½ cup vegetable oil
– 3 large eggs
– ½ cup milk
Method
1. Preheat the oven to 180°C and line a cupcake tin with cupcake liners.
2. In a large bowl, mix the flour, baking powder, spices, and salt together.
3. In another bowl, combine the brown sugar, vegetable oil, eggs, and milk. Whisk until smooth.
4. Slowly add the dry ingredients into the wet mix. Stir gently until everything is combined.
5. Fill the cupcake liners about 2/3 full with the batter and bake for 20-22 minutes or until a toothpick comes out clean. Let them cool before serving.
