Ingredients
– 1 ½ cups all-purpose flour
– 1 tsp baking powder
– 1 tsp baking soda
– 1 tsp ground ginger
– 1 tsp cinnamon
– ½ tsp ground cloves
– ½ tsp salt
– 1 cup brown sugar
– ½ cup vegetable oil
– 2 large eggs
Method
1. Preheat your oven to 180°C and line a muffin tin with cupcake liners.
2. In a large bowl, mix together the flour, baking powder, baking soda, spices, and salt until combined.
3. In another bowl, whisk the brown sugar, vegetable oil, and eggs together until smooth.
4. Gradually add the dry ingredients to the wet ingredients, stirring until everything is mixed well.
5. Use a spoon or scoop to fill the cupcake liners about two-thirds full. Bake for 18-20 minutes.
