Gingerbread Cream Pie Recipe
Ingredients
– 1 cup gingerbread cookie crumbs
– 3 tablespoons butter, melted
– 1 cup cream cheese, softened
– 1 cup powdered sugar
– 1 teaspoon vanilla extract
– 1 cup heavy whipping cream
– 1 teaspoon ground ginger
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/2 cup whipped cream (for topping)
Method
1. Preheat the oven to 180°C. Combine gingerbread cookie crumbs and melted butter in a bowl until mixed well.
2. Press the mixture into a pie dish to form the crust. Bake in the oven for 10 minutes, then let it cool completely.
3. In another bowl, beat the softened cream cheese until creamy. Add the powdered sugar, vanilla extract, ground ginger, ground cinnamon, and nutmeg. Mix until smooth.
4. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold this whipped cream into the cream cheese mixture until well combined.
5. Spread the cream mixture into the cooled crust. Top with whipped cream and refrigerate the pie for at least 4 hours before serving.
