Ginger And Carrot Veg Balls Recipe With Sautéed Leeks Delight

Ingredients

– 2 medium carrots, grated
– 1 tablespoon ginger, grated
– 1 tablespoon olive oil
– 1 leek, chopped
– 1 cup breadcrumbs
– 1/2 cup chickpea flour
– 1 teaspoon cumin powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 tablespoons fresh parsley, chopped

Method

1. Preheat the oven to 190°C (375°F).
2. In a large bowl, mix the grated carrots, ginger, breadcrumbs, chickpea flour, cumin, salt, black pepper, and parsley.
3. Shape the mixture into small balls and place them on a baking tray lined with parchment paper.
4. Bake for about 25 minutes or until the balls are golden brown.
5. While the balls are baking, heat the olive oil in a pan and sauté the chopped leek until it becomes soft.
