Ingredients
- 1 kg baby potatoes
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
Method
- Preheat the oven to 220°C (425°F).
- Wash the potatoes and cut them in half if they are large.
- In a bowl, mix together olive oil, minced garlic, rosemary, salt, and pepper.
- Add the potatoes to the bowl and toss them until they are well coated.
- Spread the potatoes on a baking tray and roast for 25-30 minutes until golden brown. Sprinkle with parsley and drizzle lemon juice before serving.
