Ingredients
400 g pasta
5 medium fresh tomatoes, chopped
2 cups fresh spinach, roughly chopped
1 teaspoon garlic, minced
1 teaspoon olive oil
Salt, to taste
Pepper, to taste
1/4 cup fresh basil, chopped
1/4 cup grated cheese
1 tablespoon lemon juice
Method
Boil water in a large pot and cook the pasta according to package instructions until al dente. Drain and set aside.
Heat a pan on medium and add olive oil. Toss in minced garlic and sauté for about 30 seconds until fragrant.
Add the chopped tomatoes along with spinach to the pan. Stir carefully for 3-4 minutes until the spinach wilts and tomatoes soften.
Season the mixture with salt, pepper, and lemon juice. Stir well for an even flavor.
Combine the cooked pasta with the tomato and spinach mixture. Top with chopped basil and grated cheese before serving.
