Ingredients
– 4 cups fresh tomatoes, chopped
– 1 cup sweet corn, fresh or frozen

– 500 ml vegetable broth
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon dried basil
– Optional: fresh basil leaves for garnish
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the diced onion and garlic, cooking until the onion becomes soft.
3. Stir in the chopped tomatoes and sweet corn, allowing them to cook for a few minutes.
4. Pour in the vegetable broth, then add salt, pepper, and dried basil. Let it simmer for about 15 minutes.
5. Use a blender to puree the soup until smooth or leave it chunky if preferred. Serve hot with fresh basil on top if desired.
