Fresh Sweetcorn, Avocado, And Tomato Salad Recipe For Summer

Ingredients

– 1 cup sweet corn (canned or frozen)
– 1 avocado
– 1 cup cherry tomatoes
– 1 small red onion
– 1 lime
– 2 tablespoons olive oil
– Salt, to taste
– Pepper, to taste
– Fresh coriander (or parsley)

Method

1. Start by draining and rinsing the sweet corn if using canned. If frozen, cook it according to package instructions and let it cool.
2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it slightly with a fork.
3. Halve the cherry tomatoes and chop the red onion into small pieces. Add both to the bowl with the avocado.
4. Squeeze the juice of the lime over the mixture. Add olive oil, salt, and pepper. Stir everything together gently.
5. Chop the fresh coriander and sprinkle it on top before serving. Enjoy your salad!
