Prawn and Avocado Salad

Ingredients

250 g prawns, peeled and deveined
1 ripe avocado, diced
2 cups mixed salad greens
1 medium tomato, diced
1 small red onion, thinly sliced
1 lime, juiced
2 tablespoons olive oil

Pepper, to taste

Method

1. Start by boiling a pot of water. Add the prawns and cook for 2-3 minutes until they turn pink and opaque. Drain and let them cool.
