Method

1. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir until well mixed.
2. In another bowl, whisk together milk, egg, melted butter, and vanilla extract.
3. Pour the wet ingredients into the dry ingredients. Mix gently until just combined.
4. Heat a non-stick frying pan over medium heat. Add a little butter or oil to coat the pan.
5. Pour small amounts of the batter into the pan. Cook each pancake for about 2-3 minutes on each side until golden brown. Serve with maple syrup.
