Ingredients

– 1 cup (250 ml) buttermilk
– 1 large egg
– 2 tablespoons melted butter
– 1 teaspoon vanilla extract
– Oil or butter for cooking
Method
1. In a large bowl, mix flour, sugar, baking powder, baking soda, and salt together.
2. Combine buttermilk, egg, melted butter, and vanilla in another bowl.
3. Pour the wet mixture into the dry ingredients. Stir until just combined; avoid overmixing.
4. Heat a non-stick pan or griddle over medium heat and add a little oil or butter.
5. Pour a scoop of batter onto the hot surface. Cook until bubbles form, then flip and cook until golden. Repeat for all batter.
