Method
1. Combine oats, almond milk, and a pinch of salt in a large pot over medium heat.
2. Stir in honey, vanilla extract, and cinnamon. Let it cook for about 5 minutes, stirring occasionally.
3. Once the mixture thickens, remove it from the heat and mix in the chia seeds if using.
4. Serve the oatmeal in bowls and top each with mixed berries, nuts, and a dollop of yogurt if desired.
