Ingredients
1 cup rice
2 cups water
1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, minced
1 bell pepper, diced
2 cups diced tomatoes
1 teaspoon dried oregano
1 teaspoon salt
1/4 teaspoon black pepper
Method
1. Rinse the rice under cold water to remove excess starch.
2. In a pot, bring the water to a boil. Add the rice and a pinch of salt, then reduce the heat to low. Cover and cook for 18 minutes or until tender.
3. While the rice is cooking, heat the olive oil in a large pan over medium heat. Add the chopped onion and cook until soft.
4. Stir in the minced garlic and diced bell pepper. Cook for an additional 3 minutes.
5. Mix in the diced tomatoes, oregano, salt, and black pepper. Simmer for 10 minutes. Serve the tomato mixture over the rice.
