Ingredients
– 2 cups of rice
– 4 cups of chicken or vegetable broth
– 1 cup of chopped carrots
– 1 cup of peas
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 teaspoon of dried thyme
– 2 tablespoons of olive oil
– Salt to taste
– Pepper to taste
Method
1. Heat olive oil in a large pot over medium heat.
2. Add onions and garlic, cooking until softened.
3. Stir in the carrots and cook for about 5 minutes.
4. Add the rice, broth, thyme, salt, and pepper. Bring to a boil, then reduce heat.
5. Cover and simmer for about 20 minutes or until the rice is tender. Stir in the peas before serving.
