Method
1. In a mixing bowl, whisk together the Dijon mustard, apple cider vinegar, and honey until smooth.
2. Add the olive oil, salt, black pepper, garlic, and thyme to the bowl. Stir until everything is well combined.
3. Mix in the lemon juice to add some freshness to the flavor.
4. Gradually add warm water to the mixture, whisking until you reach your desired consistency.
5. Transfer the mustard to a jar or container and refrigerate it. Let it chill for at least an hour before using.
