Ingredients
500 g ground beef
1 onion, chopped
2 cloves garlic, minced
1 can (400 g) diced tomatoes
1 can (400 g) kidney beans, drained and rinsed
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon salt
1 cup shredded cheese
2 cups cooked rice
Method
1. In a large pot, brown the ground beef over medium heat until it’s fully cooked. Drain any excess fat.
2. Add the chopped onion and minced garlic to the pot. Cook for about 3-5 minutes, or until the onion softens.
3. Stir in the diced tomatoes, kidney beans, chili powder, cumin, and salt. Bring the mixture to a simmer and let it cook for 10 minutes.
4. Serve the beef mixture over cooked rice, then top each serving with a generous amount of shredded cheese.
