Ingredients
– 500 g chicken breast, diced
– 2 cups broccoli florets
– 1 cup carrots, sliced
– 1 cup bell pepper, chopped
– 3 tablespoons olive oil
– 2 cloves garlic, minced
– 1 tablespoon soy sauce
– 1 teaspoon salt
– 1 teaspoon pepper
– 1 cup cooked rice
Method
1. Heat the olive oil in a large skillet over medium heat.
2. Add the garlic and sauté for about 1 minute until fragrant.
3. Put in the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through.
4. Mix in the broccoli, carrots, and bell pepper. Stir-fry for about 5–7 minutes until the veggies are tender.
5. Pour the soy sauce over the stir-fry and toss to coat. Serve over the cooked rice.
