Ingredients

1 cup of rice
2 cups of water
1 tablespoon of olive oil
1 teaspoon of salt
1 onion, chopped
2 garlic cloves, minced
1 cup of mixed vegetables
1 can of diced tomatoes
1 teaspoon of dried herbs
1 cup of shredded cheese

Method

1. Start by rinsing the rice under cold water until the water runs clear.
2. Combine the rinsed rice, water, olive oil, and salt in a pot.
3. Place the pot on the stove and bring to a boil. Once boiling, reduce to a simmer and cover. Cook for about 15 minutes.
4. In a separate pan, sauté the chopped onion and minced garlic in a little olive oil until soft. Add mixed vegetables and cook for a few minutes.
5. Stir in the diced tomatoes and dried herbs. Let it simmer while the rice finishes cooking. Once done, mix everything together and sprinkle cheese on top.
