Ingredients
1 tablespoon vegetable oil
1 onion, finely chopped
2 garlic cloves, minced
1 bell pepper, diced
400 g canned tomatoes
1 teaspoon dried oregano
1 teaspoon ground paprika
1 cup cooked rice
400 g cooked chicken, shredded
Salt and pepper to taste
Method
Heat the oil in a saucepan over medium heat.
Add the onion and cook until soft.
Stir in the garlic and bell pepper, cooking for a few more minutes.
Mix in the tomatoes, oregano, and paprika, then season with salt and pepper.
Fold in the cooked rice and shredded chicken, heating everything through before serving.
