Ingredients
500 g chicken breast, diced
2 cups broccoli florets
1 cup carrots, sliced
1 cup bell peppers, chopped
2 cloves garlic, minced
60 ml soy sauce
30 ml olive oil
1 teaspoon ground ginger
2 cups rice
4 cups water
Method
1. Heat olive oil in a large pan over medium heat.
2. Add minced garlic and ginger, stirring for about 30 seconds.
3. Place diced chicken in the pan and cook until browned on all sides.
4. Mix in the broccoli, carrots, and bell peppers. Pour soy sauce over the vegetables and chicken. Cook until tender.
5. While the chicken cooks, rinse the rice. In a separate pot, bring water to a boil. Add rice, cover, and simmer for 15 minutes or until fluffy.
