Ingredients
– 1 cup of rice
– 2 cups of water
– 1 tablespoon of olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 bell pepper, diced
– 1 can (400g) of diced tomatoes
– 1 teaspoon of dried oregano
– 1 teaspoon of salt
– 1 cup of frozen peas
Method
1. Start by rinsing the rice under cold water until the water runs clear.
2. In a medium pot, combine the rinsed rice and water. Bring to a boil over medium heat.
3. Once boiling, reduce heat to low, cover the pot, and simmer for 15 minutes or until the water is absorbed.
4. While the rice cooks, heat olive oil in a large skillet over medium heat. Add the onion and garlic, then sauté until soft.
5. Add the bell pepper, diced tomatoes, oregano, salt, and frozen peas. Cook for about 5 minutes until heated through. Mix in the cooked rice and stir well.
