Ingredients
– 500 g of chicken breast, diced
– 2 tablespoons of olive oil
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 red bell pepper, sliced
– 1 teaspoon of paprika
– 400 g of canned diced tomatoes
– 1 cup of chicken broth
– 1 teaspoon of dried oregano
– Salt and pepper to taste
Method
1. Heat olive oil in a large pan over medium heat.
2. Add chopped onion and minced garlic, cooking until soft.
3. Stir in diced chicken and cook until browned on all sides.
4. Mix in the bell pepper, paprika, canned tomatoes, chicken broth, and oregano.
5. Simmer for 20 minutes. Season with salt and pepper before serving.
