Ingredients
– 1 cup brown rice
– 1 can black beans (400g)
– 1 cup corn
– 1 avocado
– 1 cup diced tomatoes
– 1 lime
– 1 tsp cumin
– 1 tsp paprika
– 1/2 cup fresh cilantro
– Salt to taste
Method
1. Cook the brown rice according to package instructions.
2. Heat the black beans in a saucepan until warm, then add cumin and paprika.
3. Dice the avocado and tomatoes, then chop the cilantro.
4. Once the rice is done, assemble bowls with rice, beans, corn, avocado, tomatoes, and cilantro.
5. Squeeze lime juice over the bowls and season with salt.
