Ingredients

– 1 cup of rice

– 1 zucchini, diced

– 2 eggs, beaten
– Salt and pepper to taste

Method

1. Rinse the rice under cold water until it runs clear.
2. In a pot, combine the rice and water. Bring to a boil, then reduce the heat and simmer until the rice is cooked and the water is absorbed.
3. Heat the oil in a large skillet over medium heat. Add the onion and garlic, cooking until softened.
4. Stir in the carrot and zucchini, and cook for another 5 minutes until they are tender. Add the frozen peas.
5. Push the vegetables to the side of the skillet. Pour the beaten eggs into the empty space, scrambling them until fully cooked. Mix everything together and season with salt and pepper.
