Ingredients
1 cup rice
2 cups water
1 tablespoon olive oil
1 teaspoon salt
1 tablespoon butter
1 cup mixed vegetables (frozen or fresh)
1 cup cooked chicken (shredded)
1 tablespoon soy sauce
1 teaspoon garlic powder
1 teaspoon onion powder

Method
1. Rinse the rice under cold water until it runs clear. Drain it well.
2. In a medium saucepan, combine the rice, water, salt, and olive oil. Bring to a boil.
3. Reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until water is absorbed.
4. Stir in the butter, mixed vegetables, cooked chicken, soy sauce, garlic powder, and onion powder. Cook on low for an additional 5 minutes.
5. Fluff with a fork and serve warm.
