Ingredients
– 2 cups of pasta
– 1 tablespoon of olive oil
– 3 cloves of garlic, minced
– 1 can (400g) of diced tomatoes
– 1 teaspoon of dried basil
– 1 teaspoon of dried oregano
– 1/2 teaspoon of salt
– 1/4 teaspoon of pepper
– 1 cup of spinach, chopped
– 1/2 cup of grated cheese
Method
1. Cook the pasta in boiling water according to package instructions. Drain and set aside.
2. Heat the olive oil in a large pan over medium heat. Add the minced garlic and sauté for 1 minute.
3. Pour in the diced tomatoes, then sprinkle in the basil, oregano, salt, and pepper. Stir to combine and let it simmer for 5 minutes.
4. Add the chopped spinach to the tomato mixture. Cook for another 2-3 minutes until the spinach has wilted.
5. Combine the cooked pasta with the tomato and spinach mixture. Top with grated cheese before serving.
