Ingredients
1 cup rice
1 tablespoon olive oil
2 cups vegetable broth
1 teaspoon salt
1/2 teaspoon pepper
1 small onion, chopped
2 cloves garlic, minced
1 cup frozen peas
1/2 cup grated cheese (optional)
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add chopped onions and minced garlic. Cook until softened, about 3 to 5 minutes.
3. Stir in the rice and cook for an additional 2 minutes.
4. Pour in the vegetable broth, add salt, and pepper. Bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes, or until rice is tender.
5. Fold in the frozen peas and cheese, stirring gently until heated through.
