Ingredients
– 2 cups of chopped vegetables (carrots, bell peppers, zucchini)
– 1 tablespoon of olive oil
– 1 teaspoon of salt
– 1/2 teaspoon of black pepper
– 1 teaspoon of garlic powder
– 2 cups of cooked rice
– 1 can (400 ml) of diced tomatoes
– 1 teaspoon of dried oregano
– 1 cup of shredded cheese
– Fresh parsley for garnish
Method
1. Preheat your oven to 190°C (375°F).
2. Heat the olive oil in a large pan over medium heat. Add the chopped vegetables and sauté for about 5 minutes.
3. Sprinkle the salt, black pepper, and garlic powder over the vegetables. Stir everything together and cook for another 3 minutes.
4. Mix the cooked rice, diced tomatoes, and oregano into the pan. Stir until everything is combined well.
5. Transfer the mixture to a baking dish, top with shredded cheese, and bake for 20-25 minutes, or until the cheese is melted and bubbly.
