Method

1. Heat the olive oil in a large pot over medium heat.

4. Pour in the chicken stock, then add the peas, carrots, thyme, salt, and pepper.
5. Bring everything to a boil, then reduce the heat and cover the pot. Let it simmer for about 20 minutes, or until the rice is cooked.
