Ingredients
– 6 large eggs
– 1 cup parsley, chopped
– 1 medium onion, finely chopped
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon red chili flakes
– 1/2 cup vegetable oil
– 1 cup potato, grated
– 1/4 cup water
– 1/2 teaspoon paprika
Method
1. Whisk the eggs in a large bowl. Add the chopped parsley, onion, salt, black pepper, red chili flakes, and paprika. Mix everything together well.
2. Grate the potato and add it to the egg mixture. Stir in the water until everything is combined.
3. Heat the vegetable oil in a large skillet over medium heat.
4. Pour the egg and potato mixture into the hot skillet, spreading it evenly. Cook for about 5 to 7 minutes until the bottom is golden and set.
5. Carefully flip the frittata and cook for another 5 minutes until both sides are cooked through. Serve warm to enjoy.
