Ingredients
- 1 kg beef chuck, cut into 2.5 cm pieces
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 stalks celery, sliced
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 3 cups beef broth
- 1 cup canned diced tomatoes
- 1 bay leaf
Method
- Preheat the oven to 160°C.
- Heat olive oil in a large oven-safe pot over medium heat. Brown the beef pieces in batches, then remove them from the pot.
- Add chopped onion, carrots, and celery to the same pot. Cook for about 5 minutes until softened.
- Stir in minced garlic and dried thyme, then return the beef to the pot. Pour in the beef broth and diced tomatoes. Add the bay leaf.
- Cover the pot and place it in the oven. Cook for 3 hours or until the beef is tender.
