Ingredients
– 1 whole chicken (about 1.5 kg)
– 2 tablespoons olive oil
– 1 tablespoon salt
– 1 teaspoon black pepper
– 2 teaspoons garlic powder
– 2 teaspoons paprika
– 1 lemon (cut into wedges)
– 4 sprigs of fresh rosemary (or 1 teaspoon dried)
– 1 onion (cut into quarters)
– 4 carrots (cut into pieces)
Method
1. Preheat the oven to 220°C (425°F).
2. Rinse the chicken under cold water and dry it with paper towels.
3. In a bowl, mix olive oil, salt, pepper, garlic powder, and paprika together.
4. Rub this mixture all over the chicken, including inside the cavity. Place lemon, rosemary, onion, and carrots inside the chicken.
5. Put the chicken in a roasting pan and cook for about 1 hour and 15 minutes or until the juices run clear when pierced.
