Ingredients

– 1 cup quinoa
– 2 cups vegetable broth
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 zucchini, diced
– 1 red bell pepper, diced
– 1 can black beans, rinsed and drained
– 1 teaspoon cumin
– 1 cup corn kernels

Method

1. Rinse the quinoa under cold water until the water runs clear.
2. In a saucepan, bring the vegetable broth to a boil. Add the quinoa and reduce heat to low. Cover and cook for about 15 minutes until the liquid is absorbed.
3. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, sauté until soft.
4. Stir in the zucchini and bell pepper. Cook for about 5 minutes, stirring occasionally.
5. Mix in the cooked quinoa, black beans, corn, and cumin. Stir well and heat for another 5 minutes before serving.
