Ingredients

– 400 g all-purpose flour
– 250 ml warm water
– 10 g instant yeast
– 50 ml olive oil
– 1 tsp salt
– 200 g mashed sweet potato
– 2 tbsp fresh herbs (like rosemary or thyme)
– 1 tbsp sugar
– 1 tsp black pepper
– 1 egg (for egg wash)

Method

1. Combine warm water, sugar, and yeast in a large bowl. Let it sit for about 10 minutes until bubbles form.
2. Mix in the sweet potato and olive oil. Stir until combined.
3. Add flour, salt, herbs, and black pepper to the bowl. Mix until a sticky dough forms.
4. Cover the bowl with a cloth and let it rise in a warm place for about 1 hour.
5. Preheat the oven to 200°C. Shape the dough into rolls and place them on a baking tray. Brush with beaten egg. Bake for 20-25 minutes until golden.
